This fish recipe is perfect when I don't have a lot of time.  
 
Fish Steaks with Tarragon Sauce

Serves: 4

Prep Time: 10 minutes
Cook Time: up to 10 minutes 

Ingredients:
1 1/4 lbs. fresh or frozen salmon, swordfish, or tuna steaks
1/2 c. plain fat-free yogurt or fat free sour cream
1/2 c. shredded mozzarella or monteray jack cheese
2 tsp. fresh tarragon or 1/2 tsp. of dried tarragon

Directions:
Thaw, rinse and pat dry fish. If necessary, cut fish into 4 serving size pieces. For sauce, stir together yogurt, cheese, and tarragon.
Preheat broiler. Spray broiler pan rack with cooking spray and place fish on the pan. Sprinkle with salt and pepper. Broil about 4 inches from the heat for 6-9 mins, until fish flakes. Spoon sauce over the fish and broil 30-60 seconds more or until cheese starts to melt.
